Pork Chops with Apples and Cranberries

4 to 6 butterfly pork chops, about ¾” thick
Salt and pepper
¼ C flour
2 T butter
1 t olive oil
1 large onion, sliced
2 C coarsely chopped apple
1 T lemon juice
½ C apple cider or apple juice
3 T brown sugar
¼ t cinnamon
Dash ground allspice
1/3 C dried cranberries

In a large skillet, heat butter over medium heat. Add onions and sauté for 4 to 6 minutes, until lightly browned. Remove onions to a plate and set aside. Add olive oil to the skillet. Sprinkle pork chops with salt and pepper then dredge in flour. Brown the pork chops for about 2 minutes on each side. Meanwhile, combine chopped apples with lemon juice, apple cider, brown sugar and spices. Pour the apple mixture over the pork chops, add the onions back to the skillet and bring to a simmer. Reduce heat to medium-low and simmer, uncovered, for 5 minutes. Cover and simmer for 20 minutes. Stir in cranberries and continue cooking for 2 minutes longer.  Serves 4 to 6.
